Spring brings a brief, important window in Japan’s tea-growing regions. New shoots emerge soft and bright, and growers watch the weather closely before deciding when each plot is ready. The goal is not speed; it is to meet the leaf at its best moment.
At OneSide, our sourcing approach begins with relationships and careful selection. We look for teas that express their origin clearly—fresh aroma, balanced flavour and a finish that invites another sip.
From field to selection
Harvested leaves move quickly into the first stages of processing to protect their colour and character. Samples are then assessed for aroma, texture, flavour and consistency. Each choice is made with the final cup in mind, whether that tea will be whisked traditionally or served in a modern café.
What we are watching this season
